Shropshire Fidget Pie recipe
Shropshire Fidget Pie
1200 g (8 oz) rich shortcrust pastry
1 lb (450 g) potatoes
200 g (8 oz) ham or bacon, diced
1 lb (450 g) apples
salt and pepper
2/3 cup (150 ml) 1/4 pt stock or beer
1 tablespoon sugar

1. Peel and slice the potatoes thinly.

2. Peel and slice the apples, sprinkle a little sugar on them only if they are particularly sour.

3. Arrange the potato, bacon and apples in layers in a deep pie dish, seasoning each layer.

4. Add the stock.

5. Roll out the pastry, cover, glaze and cook at the bottom of the oven at 180°C, 350°F, mark 4 for an hour
