3/4 stick + 1 tbsp (3 12 oz) 100 g butter or margarine
2 tbsp (25 g) caster sugar (superfine granulated)
1 pinch of salt
1 cup (110 g) self raising (self rising) flour
grated rind of 12 orange
fat for greasing
orange butter icing

for the orange butter icing
2 tbsp (25 g) softened butter
1/3 cup + 1 tbls (60 g) icing sugar (confectioners sugar)
1 tsp orange juice

1. Heat the oven to moderate, 180°C, gas mark 4.

2. Cream the fat and sugar well together.

3. Work in the salt, flour, and orange rind.

4. Place the mixture in a forcing bag with a large star nozzle, and pipe 9cm lengths on to a greased baking sheet, making 20 biscuits.

5. Bake for 15 minutes. Cool on the sheet.

6. When cool, sandwich together in pairs with orange butter icing.


to make orange butter icing
1. Sift the icing sugar.

2. Add gradually to the butter with the juice, beating until the icing is smooth and of a soft spreading consistency.
