Pork Chops With Cheese And Beer
This substantial savoury dish combines good home-produced ingredients. Rutland cheese is an unusual mixture made from Cheddar, beer, garlic and parsley. If you can t find it, use plain Cheddar and add garlic and parsley to the mixture.

SERVES 4

4 loin chops, each weighing 175 g (6 oz)
100 g (4 oz) Rutland cheese, grated
5 ml (1 tsp) prepared English mustard
45 ml (3 tbsp) brown ale
tomato halves and watercress sprigs, to garnish

1. Grill the chops under a moderate grill for 7 - 10 minutes depending on the thickness.

2. Turn over and grill for 7 - 10 minutes, until cooked through.

3. Mix together the cheese, mustard and brown ale. Spread over the chops and grill until the cheese has melted.

4. Transfer to a warm serving plate and garnish with tomato halves and watercress sprigs.
