Eton Mess recipe
Eton Mess
When the annual prize-giving is held at Eton College, one of Britain's most famous public schools, parents and pupils have a picnic on the playing fields. Among the dishes then served is this marvellously boozy mixture of strawberries, cream and crushed meringues, to which the school has lent its name.

Serves 4 - 6

450 g (1 lb) strawberries, hulled
75 ml (3 fl oz) kirsch
3 75 ml (12 fl oz) fresh double or whipping cream
6 small meringues, crushed

1. Reserve a few small strawberries for the decoration. Chop the remainder and place in a bowl. Sprinkle with the kirsch, cover and chill for 2 - 3 hours.

2. Whip the cream until it just holds its shape, then gently fold in the strawberries and their juices and the crushed meringues. Spoon into a glass serving dish, decorate with the reserved strawberries and serve immediately.
