Makes 12

fat for greasing
2 egg whites
23 cup (150 g) 5 oz sugar
150 g desiccated coconut

1. Grease a baking sheet and cover with rice paper.

2. Whisk the egg whites until stiff, then fold in the sugar and coconut, using a metal spoon.

3. Divide the mixture into 12 portions and place in heaps on the rice paper.

4. Using a fork, form into pyramid shapes.

5. Bake in a very cool oven, 140°C, Gas 1, for 45 minutes 1 hour until pale brown in colour.
