Cheese And Onion Pie
200 g (8 oz) flaky pastry
salt and pepper
200 g (8 oz) grated cheese
1 egg, beaten
2 onions, chopped finely

1. Roll out the pastry and line a flan tin. Reserve enough for a lid.

2. Cook the onions in boiling water for 5 minutes.

3. Make sure they are well drained, add nearly all the egg and season.

4. Mix with the cheese. Pour the cheese and onion mixture into the pie.

5. Damp the edges of the pastry in the dish and fit a lid on top.

6. Press the edges well together and decorate.

7. Brush to glaze with the remaining egg.

8. Bake in the top of a 200°C, 400°F, mark 6 oven for 30 minutes.
