Buttermilk Spice Cake
300 g (10 oz) flour
225 g (8 oz) sugar
8 g (1 1/2 tsp) bicarbonate of soda
5 g (1 tsp) baking powder
pinch salt
5 g (1 tsp) ground cinnamon
2.5 g (1/2 tsp) ground cloves
100 g (4 oz) butter, melted
350 ml (12 fl oz) buttermilk
2 eggs

1. Sift the dry ingredients together. Add the butter and buttermilk and beat the mixture until it is smooth.

2. Pour the batter into a greased and floured 20 cm (8 in) cake tin and bake in a preheated oven 180°C (350°F) Gas 4 for 40 minutes.
