Banana Cake

100 g (4 oz) butter or margarine
130 g (4 1/2 oz) dark, soft brown sugar
3 eggs
4 bananas
10 g (2 tsp) ground cassia or cinnamon
5 g (1 tsp) baking powder
30 ml (2 tbsp) boiling milk
170 g (6 oz) plain flour
5 g (1 tsp) baking powder

1. Melt the butter and sugar together, then beat in the eggs.

2. Mash the bananas with the cassia or cinnamon. Add to the egg mixture.

3. Mix the baking powder with the boiling milk and add to the mixture.

4. Stir in the flour and the second quantity of baking powder, sieved together.

5. Put into a greased 20 x 20 cm (8 x 8 in) square tin and bake in a preheated oven at 190°C (375°F) Gas 5 for an hour.
