Purple Sprouting Broccoli Romaine
Serves 3 - 4

500 g (1 lb) purple sprouting broccoli
2 cloves garlic
6 anchovies (tinned in olive oil)
40 g (1 1/2 oz) butter
pepper

1. Trim the broccoli and steam or boil until just cooked.
2. Meanwhile, pound the garlic and anchovies (plus a little of the oil from the can) together in a pestle and mortar. Add a little pepper.
3. Melt the butter in a large pan and heat until it foams.
4. Add the anchovy mixture and stir together, continuing to cook until the butter starts to brown.
5. Tip in the drained broccoli and turn until well coated. Serve in a warmed dish.
