Tattie Hushie is an English potato soup with leek, oatmeal, pepper and ketchup (or the equivalent tomato sauce).
Serves 6
1 1/2 lb (700 g) potatoes, peeled and diced
1 large leek, thinly sliced
1/2 stick (2 oz) 50 g butter
25 g (1 oz) medium coarse oatmeal
1.15 litre (2 pint) skimmed milk
2 tsp salt
1 good grinding black pepper
1 tbsp tomato sauce or ketchup
1. Cook the potatoes in water until almost tender.
2. Add the leek and cook for a further 5 minutes.
3. Drain and mash thoroughly with the butter.
4. Mix in the oatmeal, milk and seasonings. Stirring constantly, gently bring to just below boiling point.
5. Serve with a swirl of the tomato sauce.
