Serves 8

1 1/2 lb (700 g) potatoes
1/2 tsp salt
1/4 cup (4 Tbls) 50 g sugar

1. Peel the potatoes and place in a large saucepan with water and salt.
2. Bring to the boil then simmer gently for 15 minutes, until the potatoes are just cooked.
3. Drain and dry off a little.
4. In a large frying pan, heat the sugar until lightly browned, or caramelized, stirring constantly.
5. Add the butter and stir round the pan until melted.
6. Add the potatoes and cook for about 10 minutes, shaking the pan carefully until all the potatoes are evenly coated.
