225 g (1/2 lb) chick-peas, cooked until soft
2/3 cup (150 ml) 1/4 pt cooking liquid
juice 2 lemons
1/3 cup (3 fl oz) 90 ml tahini
2 tbsp (30 ml) olive oil
2 cloves garlic, crushed with a pinch sea salt
freshly ground black pepper
2 tbsp (30 ml) chopped parsley
1 tsp (5 ml) paprika
1. Pass the chick peas through a food mill and beat in the cooking liquid.
2. Gradually beat in the lemon juice, tahini, oil, garlic and pepper.
3. Spoon the hummus into a serving dish or bowl and chill it.
4. Just before serving sprinkle the parsley and paprika over the top.
