Parsnip and Apple Casserole
Serves 6

400 g parsnips
200 ml apple sauce
fat for greasing
1/3 cup (60 g) brown sugar
salt
1/2 tsp grated nutmeg
1 tbsp lemon juice
1/3 cup (75 g) butter
1 1/4 cup (75 g) soft white breadcrumbs
1/4 tsp paprika

1. Prepare and boil or steam the parsnips.
2. Mash or sieve them.
3. Arrange with the apple sauce in layers in a greased casserole.
4. Sprinkle each layer with brown sugar, salt, nutmeg, lemon juice, and flakes of butter.
5. Top with the breadcrumbs and sprinkle with paprika.
6. Cook in a fairly hot oven, 190°C, Gas 5, for 30 minutes.
