Foil baked Parsnips with Cheese
1 lb (450 g) medium sized parsnips
2 oz (50 g) 1/3 cup curd (farmers) cheese
freshly grated nutmeg
little oil for greasing foil
1. Heat the oven to gas mark 3/180°C (350°F).
2. Cut the parsnips in half lengthwise and remove the cores.
3. Cut the halves across into two pieces.
4. Fill the centre cavities with a very little cheese and grate a little nutmeg over the top.
5. Wrap the pieces of parsnip together in a large piece of oiled kitchen foil, makin sure they all stay together in pairs.
6. Lay the parcel on a baking sheet and put it into the oven for 1 1/2 hours.
