This simple recipe for cooked lettuce is one of those satisfying dishes which taste like far more than the sum of their parts. It makes a perfect light and summery partner to fish or white meat.

1 bunch of spring onions
25 g (1 oz) butter
1 large or 2 small Cos lettuces, or 4 Little Gem
1 tbsp creme fraiche
nutmeg

1. Slice the white part of the spring onions and cook gently in the butter until softened.
2. Slice the lettuce into thin ribbons, add to the pan and stir until the lettuce begins to wilt.
3. Mix in the creme fraiche and season with salt, pepper and a grating of nutmeg. Serve straight away.
