Honesty Pudding recipe
Honesty Pudding
serves 4

fat for greasing
2 oz (50 g) fine oatmeal
1 level tbsp (15 ml) plain flour (All purpose)
750 ml (1 1/4 pints) milk
1 egg, beaten
pinch of salt
2.5 ml (1/2 tsp) grated orange rind

1. Grease a 750 ml (1 1/4 pint) pie dish.

2. Set the oven at 180°c (350°f) gas 4.

3. Put the oatmeal and flour in a bowl and mix to a smooth paste with a little of the milk.

4. Bring the rest of the milk to the boil in a saucepan, then pour it over the oatmeal mixture, stirring all the time.

5. Return the mixture to the clean pan and cook over low heat for 5 minutes, stirring all the time.

6. Remove from the heat, and cool for 5 minutes.

7. Beat the egg into the cooled oatmeal mixture.

8. Flavour with the salt and orange rind.

9. Pour the mixture into the prepared pie dish, and bake for 35 - 40 minutes.

10. Serve hot from the dish, with cream and brown sugar.
