Serves 6
6 cucumbers, peeled, deseeded and diced
1 large white onion, chopped
1 garlic clove, chopped
3 tbsp extra-virgin olive oil
3 tbsp white wine vinegar
1 tbsp granulated sugar
salt and pepper
1. Bring a little water in a saucepan to the boil, add the cucumbers and cook for a few minutes, until translucent.
2. Drain and arrange in a bowl, adding salt to taste.
3. Fry the onion and garlic in the oil over a low heat for about 5 minutes, or until barely golden.
4. Add the vinegar, sugar and a little salt and pepper to taste.
5. Fry for a couple of minutes more then pour over the cucumber.
6. Leave it to rest for a couple of hours before serving at room temperature.
