Serves 6
1 lime jelly
1 teaspoon salt
175 ml (6 fl oz) boiling water
2 tablespoons white vinegar
1 teaspoon grated onion
pepper
175 ml (6 fl oz) soured cream
75 ml (3 fl oz) mayonnaise
1 large cucumber, minced and drained
lettuce leaves to serve
1. Dissolve the jelly and salt in the boiling water.
2. Stir in the vinegar, onion and pepper, then chill until thick.
3. Mix in the soured cream and mayonnaise, then fold in the cucumber.
4. Turn into individual moulds and chill until set.
5. To serve, line individual serving plates with lettuce leaves and turn out the moulded creams.
