Cucumber And Mint Water Ice
Serves 4

1 cucumber, about 8 oz (225 g), peeled and chopped
3 tbsp (60 ml) chopped fresh mint or 25 ml (1 1/2 tbsp) dried
7 fl oz (200 ml) white wine
fresh mint sprigs, to garnish

1. Place the cucumber in a blender or food processor with the mint.
2. Blend to a smooth puree, gradually adding the wine.
3. Transfer the mixture to a plastic freezerproof container and freeze for 3 - 4 hours.
4. Whisk well twice during freezing to prevent ice crystals from forming.
5. To serve, scoop the water ice into small bowls and garnish with fresh mint.
