Chilled Prawn And Cucumber Soup
Serves 4
1/2 cucumber, chopped roughly
100 g peeled prawns, thawed if frozen
450 g carton of low fat natural yogurt
1 tsp lemon juice
1 tsp chopped fresh mint
2 tsps chopped fresh parsley
1 tsp chopped fresh chives
salt and freshly ground black pepper
mint sprigs, to garnish
1. Place the cucumber, prawns, yogurt and lemon juice in a blender or food processor and process until roughly chopped, but not too smooth.
2. Stir in the herbs and season to taste.
3. Pour into individual dishes and chill thoroughly for about 1 hour.
4. Serve garnished with a sprig of mint each.
