Slice a cucumber lengthwise in half. Cut off a number of 1-1 1/4 in (3 cm) sections, depending on how many fan garnishes you wish to make and slice diagonally into 7 flaps leaving these attached at the base (originally the centre of the cucumber before it was cut in half).
Fold over alternate flaps, tucking them in between the others
