Serves 4
1/2 stick (2 oz) 50 g margarine or butter
1 lb (450 g) courgette (zucchini)s, thinly sliced
salt and freshly ground black pepper
2 tbsp chopped fresh parsley
1. Heat the margarine in a frying pan, and fry the courgettes.
2. Season with salt and pepper to taste.
3. Fry briskly for 5 minutes until the courgettes are pale golden brown.
4. Arrange on a warm dish, sprinkle with parsley and serve.
