Stir Fried Chicory And Yellow Pepper
Serves: 4
1 tbsp oil
2 shallots, peeled and finely chopped
1 garlic clove, crushed
2 cm piece fresh ginger, peeled and finely chopped
1 tbsp oyster sauce
2 tbsp water
1 carrot, peeled and cut into fine strips
2 yellow peppers, deseeded nd cut into fine strips
3 spring onions, cut into fine strips
3 heads of chicory, roughly chopped
1 tsp soy sauce
Rice or noodles
1. Heat the oil in a wok or large frying pan, then add the shallot, garlic and ginger, stir fry until softened.
2. Add the oyster sauce and water.
3. Finally add the rest of the vegetables, except for the chicory and stir fry for approximately 5 minutes. Adding the chicory a minute before the end of cooking time.
4. Add the soy sauce and mix to incorporate, then serve alongside boiled rice or noodles
