Stir frying is an easy way to jazz up a cabbage. It produces a beguilingly sweet and sour, moreish dish, popular with children. Add garlic or chilli for extra bite.
700 g (1 1/2 lb green or white cabbage
1 tsp salt
2 tsp sugar
2 tbsp malt vinegar (or use any vinegar)
1 - 2 tbsp oil
soy sauce
1. Finely slice the cabbage (use a very large knife for this: a bread knife is fine).
2. Wash and dry it well in a tea towel.
3. Mix the salt, sugar, and vinegar together.
4. Heat the oil in a large pan or a wok over a high heat.
5. Fling in the cabbage and keep stirring until coated with oil.
6. Add the vinegar mixture and a good shake of soy sauce.
7. Stir up and cook for one or two minutes more before serving.
