Scottish Potato, Cabbage and Cheese Bake
Serves 4.
1 lb (450 g) potatoes, peeled
1 large onion, sliced
1 lb (450 g) cabbage, shredded
3/4 stick (6 Tbsp) 75 g butter
1 tsp salt
Good grinding of pepper
3 oz (75 g) cheese, coarsely grated
1. Cook the potatoes and onion in a large pan of salted water.
2. Strain and put aside but keep warm.
3. Using the potato water, cook the cabbage until just tender.
4. Drain thoroughly and reserve the water for making soup at a later date, if required.
5. Grease an ovenproof dish and layer the potatoes, onion and cabbage, dotting each layer with butter and salt and pepper to taste.
6. Cover the top with grated cheese and bake in the oven Gas mark 5, 375°F (190°C) for 25 minutes.
