Serves 4
1/2 stick (4 Tbsp) 2 oz (50 g) butter
1 1/2 lb (700 g) young cabbage, finely shredded
1 medium onion, skinned and grated
2 rashers streaky bacon, chopped
pinch of grated nutmeg
1. Heat the butter in a large saucepan.
2. Add all remaining ingredients, cover pan and cook very gently for 20-30 minutes, until the cabbage is just tender, shaking the pan frequently.
