Serves 5 - 6
40 g (1 1/2 oz) lard
1 medium red cabbage, cored and shredded
1 apple, peeled, cored and chopped
1 1/4 cup (300 ml) 1/2 pint cold water
2/3 cup (150 ml) 1/4 pt vinegar
salt
1 tablespoon brown sugar
1 teaspoon corn flour (corn starch)
1. Melt the lard in a saucepan and add the cabbage.
2. Toss until coated with the fat, then stir in the apple, water, vinegar and salt.
3. Bring to the boil and simmer for about 1 hour or until tender.
4. If necessary, add more water or vinegar to the pan.
5. Stir in the sugar. Dissolve the cornflour in a little water and add to the pan.
6. Simmer, stirring, until thickened.
7. Serve with rabbit or pork.
