Beetroot with Parsley Butter
Parsley butter is a simple way to make beetroot really special. It's good with either meat or fish.
6 medium beetroot about 900 g (2 lb)
1 1/2 tbsp finely chopped parsley
butter
coarse salt
freshly ground black pepper
lemon juice
1. Cook the beetroot, ideally by baking them as above, otherwise in the microwave.
2. Slice while still warm and arrange in a warmed serving dish.
3. Alternatively, use ready cooked beetroot, slice them and heat, covered, in the oven or microwave.
4. Meanwhile, blend the softened butter with the parsley and seasoning, and add lemon juice to taste.
5. Dot on top of the warm beetroot and serve.
