Steak Diane
Serves 4

4 pieces of fillet steak 0.5cm (1/4 inch) thick
2 tbsp (1 oz) 25 g butter
30ml (2 tbsps) oil
2 tbsp (30 ml) Worcestershire sauce
1 tbsp (15 ml) lemon juice
1 tbsp (15 ml) grated onion
10 ml (2 tsps) chopped parsley


1. Fry the steaks in the butter and oil for 1-2 minutes on each side.

2. Remove them (keeping them hot) and add the Worcestershire sauce and lemon juice to the juices in the pan. Stir well and warm through;

3. Add the onion and parsley and cook gently for 1 minute.

4. Serve the sauce spooned over the steaks.
