Spiced Brisket
Serves 4

Marinade
salt, to taste
freshly ground black pepper
2 tbsp red and green peppercorns
3 garlic cloves, mashed
5 ml (1 tsp) soy sauce
5 g (1 tsp) paprika
10 g (2 tsp) prepared mustard
1 kg (2 lb) brisket of beef
1 onion, chopped
1 green pepper, chopped

1. Combine the ingredients for the marinade and spread generously over the brisket.

2. Leave to stand for an hour at room temperature, turning every 15 minutes.

3. Saute the diced onion and green pepper until soft and place at the bottom of a roasting tin.

4. Place the brisket fat side up and baste well with the marinade.

5. Cover and roast for 2 hours at 180°C (350°F) Gas 4.

6. Remove the roast and cool slightly until it can be sliced, then return to the oven and roast for another 20 minutes, until cooked.
