Beef Meat Loaf
Serves: 4 - 6

750 g (1 1/2 lb) minced beef
3/4 cup dry breadcrumbs
1 onion, grated
1/2 cup grated carrot
2 tablespoons finely chopped green capsicum (optional)
1/4 cup tomato puree
1/4 cup milk
1 egg
2 tablespoons chopped parsley
1/2 teaspoon mixed herbs
1 1/2 teaspoons salt
freshly ground black pepper

1. Place minced beef in a mixing bowl.

2. In another bowl blend together the breadcrumbs, onion, carrot, capsicum, if used, tomato puree and milk.

3. Stir in the beaten egg, herbs and seasoning.

4. Combine the mixture with the minced beef and blend ingredients lightly together until well mixed.

5. Spoon into a greased loaf tin and bake in a moderate oven 180-190°C (350-375°F) for 1 hour.

6. Drain off liquid, unmould onto a warm serving platter and serve.
